More salty, mineral and precise on the palate, sea weed hints, umami, herbs, fine creaminess
Paired with Rokkon Jade Junmai Daiginjo Sake from Matsumidori brewery in Aomori prefecture, a bottle brought from my last visit to northern Japan. A perfect example that sake is a very universal beverage that can complement not only sushi and sashimi but also caviar!
This sake is rich in umami flavours, which perfectly supports the salty, precise marine iodine character of this caviar, and the refreshing lemongrass-like and crisp green pear flavours cleanses the palate and enhances the clean and pure flavour of the caviar.
